Al Pastor Pork on the Lifesmart 24” Kamado Grill

Thinly slice Pork shoulder, lightly oil and season the pork on both sides, set aside.

Prepare pineapple 🍍 slice of cap save for later. Remove the skin of the pineapple by slicing from the cut top down to the bottom, keeping as much flesh as possible. Slice pineapple in 1/4-3/8” slices.

Using a vertical skewer or bamboo sticks in the base of the pineapple, start layering pork slices and pineapple. Start with a base of pineapple, add 2-3 layers of pork, ensure the pork drapes evenly on all sides throughout the stacking. Add pineapple slices ever 2-3 layers of pork. Top with pineapple top.
At this point it should look like a pork pineapple 🤩.

Start your grill, Put in diffuser, bring to 300-350°F, and cook until pork evenly measures 165-170°F.
#protip For juicier meats pull closer to 165°F

With a sharp knife, Slice in a long manner starting at the top, cut pieces into a taco, burrito, or just eat as cut.
